E472Esters of mono- and diglycerides of fatty acids
E472 stands for the group of esters of mono- and diglycerides of fatty acids. Appendix 1 of Circular 24/2019/TT-BYT lists INS 472a, 472b, 472c and 472e (acetic, lactic, citric and diacetyltartaric acid esters of glycerol with fatty acids); functions: emulsifier, sequestrant, stabilizer, antioxidant, flour treatment agent.
Did you know? In the industry these esters have short names: ACETEM (E 472a), LACTEM (E 472b), CITREM (E 472c, also citroglycerides) and DATEM (E 472e).

Questions about esters of mono- and diglycerides of fatty acids
What is E472 (esters of mono- and diglycerides of fatty acids)?
E472 stands for the group of esters of mono- and diglycerides of fatty acids. Appendix 1 of Circular 24/2019/TT-BYT lists INS 472a, 472b, 472c and 472e (acetic, lactic, citric and diacetyltartaric acid esters of glycerol with fatty acids); functions: emulsifier, sequestrant, stabilizer, antioxidant, flour treatment agent.
Is an ester of mono- and diglycerides harmful?
In 2020 EFSA concluded that there is no need for a numerical ADI for E 472a, b and c. For E 472d, e and f, EFSA set ADIs based on the group ADI of 240 mg/kg body weight per day (expressed as tartaric acid) for the tartrates. EFSA concluded that there is no safety concern at the reported uses and use levels.
Is E472 permitted in Vietnam?
Yes. Appendix 1 of Circular 24/2019/TT-BYT, the list of additives permitted in food, has the entries INS 472a, 472b, 472c and 472e.
Can children and pregnant women have E 472c (CITREM)?
In 2025 EFSA concluded that there is no safety concern from the use of E 472c (citric acid esters of mono- and diglycerides) at the reported use levels and at the maximum permitted levels in food for infants below 16 weeks of age (categories 13.1.1 and 13.1.5.1). This conclusion covers E 472c only. If you have a particular health condition, ask a doctor.
