E471Mono- and diglycerides of fatty acids

E471 is mono- and diglycerides of fatty acids, made from glycerol and the fatty acids of oils and fats. In food it helps oil and water mix, keeps bread soft and makes ice cream smoother.

Did you know? Breast milk also contains diacylglycerols (0.01–0.7% of lipid) and trace amounts of monoacylglycerols; EFSA (2021) compared this with the amount from E 471 in infant formula and found the same order of magnitude.

ADI “not specified” (EFSA 2017) This means no numerical ADI is needed: by JECFA’s definition of the term, at the levels needed in food the substance does not represent a hazard to health. Vietnam’s Circular 24/2019/TT-BYT calls this an ADI “không xác định” (“not specified”, Article 3(6)).

Questions about mono- and diglycerides of fatty acids

What is E471 (mono- and diglycerides)?

E471 covers the mono- and diglycerides of fatty acids. Appendix 1 of Circular 24/2019/TT-BYT lists these functions: emulsifier, antifoaming agent, glazing agent, stabilizer.

Is mono- and diglycerides of fatty acids harmful?

In 2017 EFSA concluded that there was no need for a numerical ADI for E471 and that it was of no safety concern at the reported uses and use levels.

Is E471 permitted in Vietnam?

Yes. Mono- and diglycerides of fatty acids (INS 471) are listed in Appendix 1 of Circular 24/2019/TT-BYT, the list of additives permitted in food, as an emulsifier, antifoaming agent, glazing agent and stabilizer.

Can children and pregnant women have mono- and diglycerides of fatty acids?

In 2021 EFSA concluded that there is no reason for a safety concern when E 471 is used in infant formulae for infants below 16 weeks of age (category 13.1.1) and in dietary foods for infants for special medical purposes (category 13.1.5.1), according to Annex III to Regulation (EC) No 1333/2008. If you have a particular health condition, ask a doctor.
