E451 covers the triphosphates (sodium or potassium triphosphate), salts of phosphoric acid. Appendix 1 of Circular 24/2019/TT-BYT lists these functions: acidity regulator, emulsifier, emulsifying salt, humectant, sequestrant, stabilizer, thickener.
Did you know? EFSA calls salts of the formula M5P3O10 tripolyphosphates; E451 covers pentasodium triphosphate (451(i)) and pentapotassium triphosphate (451(ii)).

Is triphosphates harmful?
In 2019 EFSA set a group ADI of 40 mg/kg body weight per day, expressed as phosphorus, for the phosphate additives (E338–E341, E343, E450–E452). EFSA noted that in one estimated scenario intake by infants, toddlers and other children exceeded this ADI.
Is E451 permitted in Vietnam?
Yes. Pentasodium triphosphate (INS 451(i)) and pentapotassium triphosphate (INS 451(ii)) are listed in Appendix 1 of Circular 24/2019/TT-BYT, the list of additives permitted in food.
