About this list

Sausages and pork rolls (minced meat) fall under the Annex 2A group “processed comminuted meat, poultry and game products”; whole-cut cold cuts fall under “processed meat, poultry and game products in whole pieces or cuts”; edible casings have a group of their own^[2]. The additives for these groups are given in the same annex^[1]. Sodium nitrite (E250) is listed in Annex 1 as a colour retention agent and a preservative; its maximum is “as residual NO2 ion”^[3]. Sorbic acid (E200) also appears for the casing group^[4].

The list comes from the “found in” section of each additive's page: the food groups of Circular 24/2019/TT-BYT, Appendix 2A (maximum levels of additives in food). Being listed means the additive is permitted there, not that every product contains it.
