About this list

Canned fruit, canned, bottled or bagged vegetables and canned seafood each have their own group, with “pasteurised” or “canned” written into the name^[2]; a single can or jar holds only a small part. Stannous chloride (E512) is listed as a colour retention agent and antioxidant, with its maximum “expressed as tin”^[3]. Calcium disodium EDTA (E385) has its level “expressed as anhydrous calcium disodium ethylenediaminetetraacetate” in the canned vegetable group^[4]. Check the ingredient line to see which codes are in the can you buy. An antioxidant, in the Codex wording, helps food last longer by resisting deterioration through oxidation^[5].
